Jenny Costa – Founder & CEO, Rubies in the Rubble. Rubies in the Rubble is an award-winning, sustainable food brand known for making great tasting condiments with a conscience. Jenny started making her first batches of relishes from surplus in 2011 and since then has been working with farmers and producers across the country to put surplus fruit and vegetables to good use.
Having been the first movers in building a food brand in the ‘anti food waste’ space, their range of ketchups, mayo and relishes have won numerous awards and are stocked across the country in stores including Waitrose, Ocado, Coop, Morrisons, Marriott, The Pig and many more.
Jenny graduated with an MA in Mathematics and Economics in 2008 before working in the city for 2 years. However, having always had a heart for sustainability and good food, she left in 2011 to launch the food brand ‘Rubies in the Rubble’. Rubies is now launching into ketchups and mayos, with the aim of having an even bigger impact with more mainstream, everyday products.

Martin Bowman, Senior Policy & Campaigns Manager – Feedback Global. Martin currently works in policy and campaigns for a variety of Feedback projects focused on food waste, meat, anaerobic digestion and sustainable animal feed. He was previously Feedback’s Pig Idea Policy Officer and Stakeholder Coordinator from 2018-19, and the Coordinator for Feedback’s Gleaning Network between 2011-2017. In 2016 he gave a TEDx talk on gleaning.
He also worked for This Is Rubbish on their EU food waste campaign, and previously worked on their Stop the Rot campaign. Martin also founded a chapter of Food Not Bombs in South East London. CLICK HERE to find out more about Feedback Global.
